Ingredients
  • 1 kg shrimp

  • 4 bamboo skewers

  • 3 tomatoes

  • 2 shallots, minced

  • 2 garlic cloves, minced

  • 1 tsp chicken stock

  • 2 tbsp cooking oil

  • 1 can (330ml) beer

  • 2 tbsp cold water

  • Salt and pepper to taste

Preperation

Peel and devein the shrimp, leaving the tails on, then thread 4-5 shrimp onto each bamboo skewer. Blanch the tomatoes, peel, seed and finely chop them. Mince the shallots and garlic.

Instructions
  1. Thread the prepared shrimp onto the bamboo skewers, 4-5 shrimp per skewer.
  2. Blanch the tomatoes in boiling water, peel, remove seeds, and finely chop.
  3. Heat the cooking oil in a pan, sauté the minced shallot and garlic until fragrant, then add the chopped tomatoes, chicken stock, salt and pepper; cook, stirring, until the sauce thickens.
  4. Pour the beer and cold water into a steamer pot, bring to a gentle boil, then place the shrimp skewers on a rack above the liquid, cover and steam for 15-20 minutes until the shrimp are pink and cooked through.
  5. Arrange the steamed shrimp on a plate, drizzle with the tomato sauce, and serve immediately.
