Ingredients
Serves 4
800 g chilled beef rump, cut into 4 portions
Braising sauce:
150 g red onion
100 g garlic
100 g ginger
200 ml soy sauce
100 ml chili sauce
300 ml crushed tomatoes
100 ml seasoned vinegar
50 ml olive oil
2 liters beef stock
50 g cilantro leaves
60 g sugar
Lentil cakes:
30 g fresh garlic
20 g scallions
1 tablespoon curry powder
250 ml heavy cream
4 egg yolks
400 g mozzarella
50 ml olive oil
Salt and white pepper to taste
10 g mixed herbs
10 g fragrant herbs for marinating
200 ml chicken stock
2 kg lentils
Preperation
Prepare the braising sauce first by sautéing onion, garlic, and ginger in olive oil.
Instructions
For the braising sauce, heat the olive oil and lightly sauté the onion, garlic, and ginger until fragrant. Add the remaining braising ingredients, bring to a boil, stir well, and season to taste.
For the lentils, sauté the scallion and garlic in olive oil until fragrant. Add the curry powder, then stir in the lentils.
Add enough chicken stock to cover the lentils and simmer until the liquid is absorbed.
Remove from the heat and let cool slightly, then blend. Mix in the cream and egg yolks until smooth.
Season to taste, spread the mixture onto a tray, and bake at 180°C for 10 minutes. Cut into shapes as desired and top with mozzarella.
For plating, serve the beef steak with the braising sauce, Mediterranean-style vegetables, roasted peppers, thin carrot slices, asparagus tips, small mushrooms, cilantro, and mustard oil.
