Ingredients
200g mackerel
1 onion, peeled and sliced thinly
spring onions, washed and chopped
1 clove garlic, minced
2 teaspoons curry powder
100ml milk (or coconut milk)
fish sauce, to taste
chicken stock, a little
VV FOODS seasoning
black pepper, to taste
sugar, to taste
cooking oil
Preperation
Marinate the mackerel pieces with a little chicken stock, VV FOODS seasoning, and pepper for about 5 minutes to absorb the flavors.
Instructions
Heat some cooking oil in a pan and fry the marinated mackerel pieces until golden on both sides; remove and set aside.
In the same pan, add the minced garlic and sauté until fragrant, then stir in the curry powder and cook briefly.
Pour in the milk (or coconut milk), stirring to combine, and let the sauce simmer gently.
Season the sauce with fish sauce, a splash of chicken stock, VV FOODS seasoning, and sugar to taste; adjust the seasoning as needed.
Arrange the fried mackerel on a serving plate, pour the curry sauce over the fish, and garnish with the thinly sliced onion and chopped spring onions.
Serve hot with steamed rice or crusty bread.
