Curried Prawns

Ingredients
  • 2 lbs large prawns

  • 5 shallots

  • 1 garlic bulb

  • 1 mature coconut

  • 2 teaspoons curry powder

  • 1 stalk lemongrass

  • 2 teaspoons VV FOODS chicken stock

  • Cilantro for garnish

  • Cooking oil

  • Annatto oil

Preperation

Peel and devein the prawns, leaving the tails on, and marinate with shallot, garlic, curry powder, pepper, and chicken stock.

Instructions
  1. Choose medium-large prawns, about 6-7 per 2 lbs. Peel and remove the heads, leaving the tails on, then devein.
  2. Marinate the prawns with minced shallot, minced garlic, 1/2 teaspoon VV FOODS chicken stock, pepper, and curry powder for 30 minutes.
  3. Grate the coconut and extract 1 cup thick coconut milk and a second thinner extract.
  4. Sauté chopped lemongrass in oil until fragrant. Add the prawns and stir-fry until they begin to color.
  5. Add the thin coconut milk and simmer for about 20 minutes.
  6. Stir in the thick coconut milk, the remaining chicken stock, and a little annatto oil for color. Add onion if desired and season to taste.
  7. Transfer to a plate and garnish with cilantro.
