Ingredients
1 lb goat meat, thinly sliced
1 tablespoon beef extract
½ teaspoon pepper
3 tablespoons pineapple juice
2 tablespoons curry powder
2 tablespoons minced garlic
1 medium onion, cut into 6 wedges, layers separated
¼ cup scallion (ngò om), cut into short pieces
3 celery stalks, thinly sliced
¼ lb peanuts, whole or halved
1 red chili, finely chopped
¼ cup cilantro (rau ngò), loosely packed
2 tablespoons cooking oil
2 tablespoons fragrant wine (infused with 5g herbs in ¼ L white wine, rested 1 day)
1 tablespoon minced garlic
1 tablespoon minced lemongrass
1 tablespoon beef extract
3 tablespoons cooking oil
2 tablespoons honey
Salt to taste
Salad greens, vinaigrette, and sliced tomato for serving
Preperation
Slice the goat meat thinly and marinate with beef extract, pepper, pineapple juice, curry powder, and minced garlic for 20 minutes. Prepare the vegetables (onion, celery, peanuts, chili, scallion, cilantro) and make the grilling sauce with fragrant wine, garlic, lemongrass, beef extract, oil, and honey; marinate the meat another 30 minutes.
Instructions
- Heat oil in a wok over high heat; add the marinated goat meat and stir-fry quickly until just cooked, then remove and set aside.
- In the same wok, add onion, celery, peanuts, and chili; stir-fry until fragrant and lightly colored.
- Return the meat to the wok, add scallion and cilantro, and toss to combine; adjust seasoning with salt if needed.
- Prepare the grilling sauce by mixing fragrant wine, minced garlic, minced lemongrass, beef extract, oil, and honey in a bowl.
- Preheat a grill to medium-high; spread the marinated meat thinly on the grill grate and brush with the grilling sauce.
- Grill the meat, turning once, until golden brown and cooked through, about 2-3 minutes per side.
- Serve the grilled meat hot with a side salad of greens, vinaigrette, and sliced tomato.
