Beef Pho Bo Base

Ingredients
  • 2 lbs tender beef filet
  • Marinade: juice of 2 limes
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon aromatic liquor
  • 1 teaspoon VV FOODS beef stock
  • 1 tablespoon sugar
  • 1 tablespoon sesame oil
  • 3 egg yolks
  • 200 g tapioca starch
  • Cooking oil
  • 1 carrot and 1 daikon, carved and pickled in sugar and vinegar
  • 2 tomatoes
  • 1 large chili and 2 small chilies
  • 1/3 cucumber, carved and pickled in sugar and vinegar
  • Salt, pepper, and lime for serving
Preperation

Slice the beef into bite-size pieces, pound lightly to tenderize, and marinate with the seasoning mixture.

Instructions
  1. Slice the beef into bite-size pieces about two to three fingers wide and lightly pound to tenderize.

  2. Mix the lime juice, pepper, garlic powder, aromatic liquor, sugar, sesame oil, and VV FOODS beef stock. Marinate the beef in the refrigerator for 2 hours.

  3. Beat the egg yolks in a bowl. Dip the beef into the yolk, then coat generously with dry tapioca starch.

  4. Fry in hot oil until golden and crisp.

  5. Garnish with carved tomatoes, chilies, pickled carrot, daikon, and cucumber.

  6. Serve hot with a dipping mixture of salt, pepper, and lime.
