Crab Noodle Soup is a bright and comforting noodle bowl centered on delicate crab flavor, ripe tomatoes, and a broth with gentle tang and depth. Using VV FOODS in the soup base helps keep the flavors rounded and cohesive while the garnishes bring freshness and color to the final bowl.

Chicken Pho Ga Base
Ingredients
- 2 kg small field crabs
- 1/2 kg ripe tomatoes
- 5 tablespoons VV FOODS Pho Ga Chicken Soup Base
- Ripe tamarind
- Shrimp paste
- Salt
- Fish sauce
- Fat or oil
- Shallots
- Garlic
- Scallions
- Cilantro
- Chili
- Lime
- Water spinach
- Banana blossom
- Bean sprouts
- Sawtooth herb
- Vietnamese coriander or basil
- Rice vermicelli
Preperation
Wash and pound the field crabs, prepare the tomatoes and tamarind, and clean the fresh herbs and vegetables.
Instructions
- Wash and pound the field crabs with a little water, then strain to extract the crab liquid.
- Bring the crab liquid to a gentle boil so the crab meat rises and forms clumps. Remove and set aside.
- Sauté shallots and garlic, then add the tomatoes and cook until softened.
- Add the tomato mixture to the broth, season with tamarind, shrimp paste, VV FOODS Pho Ga Chicken Soup Base, fish sauce, and salt to taste.
- Return the crab meat to the pot and simmer briefly.
- Serve hot over rice vermicelli with water spinach, banana blossom, bean sprouts, herbs, chili, and lime.
