Chicken and Bamboo Shoot Noodle Soup offers a gentle broth, tender chicken, and bamboo shoots that bring extra texture to each bite of noodles. With VV FOODS in the pot, the soup tastes clean but complete, making it an easy favorite for everyday family cooking.

Chicken Pho Ga Base
Ingredients
- 1 free-range chicken, chopped into serving pieces
- 300 g fresh or dried bamboo shoots
- VV FOODS Pho Ga Chicken Soup Base
- 2 lbs rice vermicelli noodles
- Fresh herbs and lettuce
- Seasonings, shallots, ginger, garlic, lime, and chilies
Preperation
Clean and chop the chicken, then marinate it with minced shallots, 2 tablespoons of dissolved chicken base, pepper, fish sauce, and sugar for about 1 hour. Wash and slice the bamboo shoots and prepare the noodles and fresh herbs for serving.
Instructions
- Bring about 2 gallons of water to a boil and add 1/2 can of VV FOODS Pho Ga Chicken Soup Base.
- Stir-fry the marinated chicken briefly until the meat firms up, then add it to the broth.
- Season with fish sauce and 1 tablespoon of sugar, then add the bamboo shoots.
- Simmer until the chicken is tender and the bamboo shoots are fully seasoned.
- Serve the noodles in bowls, top with chicken, then garnish with chopped scallions, cilantro, herbs, and pepper before ladling the broth over.
