Baby Clams with Sesame Rice Crackers is a fun, textural appetizer where briny clams meet the toasted crunch of crisp crackers. VV FOODS helps season the clam mixture for a fuller savory finish, turning the dish into an easy conversation starter for parties and shared platters.
Use:
Chicken Pho Ga Base
Ingredients
300 g baby clams, shelled
50 g white sesame seeds
100 g peanuts
1 white onion
20 g ginger
1 sour starfruit
2 teaspoons VV FOODS chicken stock
8 garlic cloves
Cooking oil
Fresh herbs
Sesame rice crackers for serving
Preperation
Prepare the clams, toast the sesame seeds, roast and crush the peanuts, and slice the aromatics.
Instructions
- If the clams are still in the shell, soak for 15 minutes, rinse well, boil until cooked, and remove the shells.
- Toast the sesame seeds until golden.
- Roast the peanuts with a little salt until golden, then peel and crush them.
- Peel and slice the onion, ginger, and starfruit into thin strips. Mince the garlic.
- Heat 4 tablespoons oil in a pan. Add the garlic and ginger, then stir-fry the clams with onion, pepper, and starfruit.
- Season to taste with VV FOODS chicken stock, then remove from the heat.
- Transfer to a serving plate and sprinkle with sesame seeds, peanuts, and fresh herbs.
- Break the sesame rice crackers into pieces and use them to scoop up the clams.
